1/2 cup sugar
1/4 cup packed brown sugar
2/3 cup cooked or canned pumpkin
1/2 cup buttermilk
Egg substitute equivalent to 2 eggs
2 Tbsp. molasses
1 tsp. grated orange peel

Blueberry Mini Muffins
1 cup butter or margarine, softened
2 cups sugar
5 eggs
1 cup buttermilk
2 tsp. vanilla extract
5 cups all-purpose flour
1 tsp. baking soda
