Beef Tortilla Casserole

I will admit – I have been super lazy this week (sick dog, general laziness, you know how it is) but this looked really good to me. This is in no way healthy, and I don’t even want to know how much sodium I am about to digest, but it sure smells good in the [...]

Pizza Casserole

My sister makes this all the time, so I decided to give it a shot last night. It did not disappoint! I believe it is 6 WW points per serving (of course, you could probably make it healthier or less healthy if you wanted to). Kevin wants to make a BBQ Chicken Pizza Casserole next. [...]

It’s like Christmas around here!

One of my bffs, Chris, gave me a huge bag full of Cooking Light and Taste of Home magazines on Monday night. I’m a sucker for cookbooks and magazines, she knows me well. Maybe carrying that heavy bag full of old magazines threw her into labor, because she had her sweet baby the next day! [...]

Ground Turkey Casserole

My goal this week is to eat at home every night – last week we ate dinner out EVERY SINGLE NIGHT. That is unusual for us, and we can both tell by the way our clothes aren’t fitting *quite* as loosely as they were before.
