Jicama Salad

Jicama Salad
12 oz. jicama, peeled, cut into strips (1 1/2 in x 1/2 inch)
1/2 cup sliced zucchini
1 small orange, peeled, cut into segments
2-3 thin slices red onion
Cilantro Lime Dressing (recipe follows)

Two Squash Saute

Two Squash Saute
1 tsp. margarine
2 1/2 cups julienned zucchini
2 cups julienned yellow squash
1/4 tsp. chicken bouillon granules
1/4 tsp. dried whole basil
1/8 tsp. fresh ground pepper
Coat a large skillet with cooking spray, add margarine, and place over medium heat until margarine melts. Add remaining ingredients, cover and cook 5 minutes or until crisp-tender. Stir occasionally.
